It’s got the consistency of nice cream – creamy and soft – with the taste of an ice – refreshing and subtle. This minted coconut watermelon soft serve has just 3 ingredients – watermelon chunks, coconut milk and fresh mint. It makes a lot so you can reduce ingredients. I used a light coconut milk and no sweeteners. But if you want it sweeter, a squeeze of maple syrup or honey would work.
Check the recipe notes for additional tips and then go make it. It’s hot out there and this soft serve is ice ice cold.

Minted Coconut Watermelon Soft Serve
A refreshing and easy to make watermelon soft serve. It's creamy and soft and contains just 3 ingredients. It's also vegan, gluten and nut free and has no added sugar.

Ingredients
- 7 C watermelon cut into chunks and frozen.
- 1 1/4 C coconut milk
- 10-12 sprigs fresh mint
- honey / maple syrup optional to sweeten (I didn't use)
Instructions
- Add all ingredients to a high speed blender or food processer and blend until creamy. Serve immediately.
Notes
Use a food processor to blend it. I find using a food processor is easier for making nice cream than a jug blender. However, if you have an incredibly powerful one that could work too.
Before freezing the watermelon make sure all pips are removed and cut it in smaller chunks for easy blending.
