These carrot cake muffins are a really good muffin. Full stop. My favourite thing about them is the reaction people have to them before eating them vs after. Apparently, most people feel meh about carrot cake muffins. Until they have these and then the reaction is more wow than meh. They’re good, they’re simple and they use an entire carrot at a minimum, making them basically a vegetable. Right? 😉.
You can leave the muffins plain OR you can be extra and add a glaze. If you want to add a glaze, all you need is to add lemon juice to icing sugar. The thicker you want that glaze to be, the less lemon juice you add. There is no recipe, just a squeeze of lemon, a scoop of icing sugar, mix taste and adjust until you get your desired consistency. The glaze goes on when the muffins are completely cool.
