The minute we tasted the new Nakd Nibbles we knew we had to get them into an ice cream. These soft Itty bitty pieces of nuts and fruit have the same consistency as cookie dough, but are so much better for you! This ice-cream is full of coconut flavour and the nibbles stay soft, cookie dough like and chewy even once frozen.

  1. Combine coconut milk, maple syrup, vanilla and salt into a small bowl. Whisk until all ingredients are fully combined.
  2. Chill in the fridge for 6-12 hours
  3. Once chilled, churn in your ice maker according to the manufacturer’s instructions. When the ice cream looks like its ready (soft serve consistency), slowly add in the nibbles and let the machine churn for 1 minute to evenly spread out the nibbles.
  4. Scoop ice cream into a freezer-safe bowl and store in the freezer. When you are ready to eat, let the ice cream sit at room temperature for 5-10 minutes to become scoop-able.
Recipe Notes

To create a creamy ice cream you need to use full fat coconut milk and not light coconut milk, which will give you an icier texture

You can replace maple syrup with honey, agave or another liquid sweetener. If you are using a thicker sweetener which doesn’t blend fully into the milk, Pour the mixture into a small pot and boil on a medium heat until the sweetener is fully combined. In this case, add the vanilla only once you take the coconut milk mixture off the heat
