How to make healthy rice crispy treats 6 ways
Last week Thursday we hosted our first Make Your Own Cooking Class at the stunning Miele Kitchens.
The idea behind “Make Your Own” is simple – we want to show you how to take the foods you love and make them healthier, how to make healthy foods that taste good and are easy to make and how to use health foods and raw ingredients and transform them into delicious dishes.
The first class saw us taking a childhood favourite – the rice crispy treat and making it healthier by removing the junk and using simple and less processed ingredients from Health Connection Wholefoods and Buttanut.
Starting with a basic recipe for healthy rice crispy treats, we made it healthier and simpler by using Health Connection Wholefoods Puffed Brown Rice instead of Rice Crispies. These puffed rice bits are larger in size and softer so they absorb more of the liquid.
Instead of processed peanut butter filled with added oils and sugars we used Buttanutt’s Roasted Almond Butter which has just two ingredients – roasted almonds and roasted macadamia nuts.
Golden Syrup was replaced with a natural sweetener – Organic Rice Syrup and real vanilla extract and Himalayan Salt were added to enhance the basic recipe.
To transform the basic recipe from good to gourmet we mixed it up with various options of mix-ins and flavours. Using a range of Health Foods Whole Connection ingredients like raw almonds, crystallised ginger, much packs, cranberries, goji berries and even cacao and carob powder, we were able to elevate a simple rice crispy treat into one with countless flavour profiles.
To change the recipe even further, making it uniquely your own, you can even replace Almond Butter with flavoured nut butter (Buttanutt makes seven incredible flavours that you can use to change the flavouring).
To top off the delectable treats, we used the best quality dark chocolate melted with a dab of coconut oil.
To try the recipe at home, below is the basic recipe as well as a few different ideas for you to make it your own.
And to give you a taste of the event, you can even buy your own “Make Your Own kit, complete with everything you need to create your own Healthy Rice Crispy Treats right over here. (We’ve also got the adorable totes on their own!)
Try one of Our Flavour Options
Almond Chocolate Ginger Treats
Add 2 tablespoons crystalized ginger, chopped and 2 tablespoons dark chocolate, chopped to the basic rice crispy treat recipe. Drizzle chocolate on top in a criss-cross pattern or leave it out.
Triple Layer Rice Crispy treats
Replace the Almond Butter in the basic rice crispy treats with Buttanutt’s Macadamia Nut Butter and leave out the fillings. Make as instructed in the basic recipe above and then place it in the freezer while you make the date caramel.
To make the date caramel soak 1 and ¼ cup pitted dates in warm water. Drain them and then blitz them in a food processor together with 1 tablespoon nut butter and 1 tablespoon plant/nut milk until you get a paste. Spread the date caramel over the rice crisp layer and place in the freezer for 30 minutes to set.
Once it is set, top it with layer of melted chocolate.
Carob Coconut Rice Crispy Treats
Add 2 tablespoons carob powder to your wet mixture (almond butter, rice syrup and vanilla) and mix well. Follow with the puffed rice and add in 2 tablespoons of desiccated coconut. Do not top with chocolate.
Everything Rice Crispy Balls
Add ¼ cup HealthFood Whole Connections Munch Pack or Trail mix to your basic recipes.
Divide mixture into balls using a tablespoon measurement. Freeze for 30 minutes before dipping into melted chocolate to coat. Serve in mini cupcake liners.
(Tip: If the mixture is too sticky to shape, place in the fridge for 5 minutes to help you shape it into balls.)
Pecan Macadamia and Berry Treats
Replace the Almond Butter with Buttanutt’s Pecan and Macadamia Nut Butter. Add in 2 tablespoons goji berries + 2 tablespoons cranberries. Drizzle with chocolate.
