  1. Heat the olive oil in a large pot and sauté the onion, garlic, celery, and thyme until softened.
  2. Add the chickpeas, canned tomatoes, smoked paprika and tomato paste. Bring to a simmer.
  3. Add the water, season with salt and pepper, and bring to a boil.
  4. Lower the heat and simmer for 10 minutes.
  5. For a chunky soup, process about two thirds of the mixture with an immersion blender, combining it back with the rest of the soup. Season to taste.
  6. Divide between 4 bowls, topping with half a boiled egg if desired.
