As much as I love date bombs, the fact that they require freezing time and a complete dip in melted chocolate means they are not a quick sweet treat unless you happen to have some already made.

These stuffed dates are the quick version of date bombs, requiring zero freezer time and zero melted chocolate and they taste just as good. They’re easily adaptable and require 4 ingredients:

  • Fresh medjool dates
  • Nut/Seed butter: I tend to go for peanut butter, almond butter or tahini but any variation works.
  • Dark chocolate: Milk would work too, but I like the contrast of sweet dates with a bitter chocolate.
  • Freeze dried raspberries: You can also use freeze dried blueberries or strawberries. They add a little crunch and delightfully tart zing.

 

If you’re adding these to a platter or serving them, the date bombs are the better option (they look neater and are less messy and the dark chocolate contains the nut butter). The instructions for those are here.

Fresh dates stuffed with nut butter, dark chocolate and freeze dried raspberries
Cuisine Dairy Free, Gluten Free, No Added Sugar, Vegan, Vegetarian

Ingredients
  

  • Fresh medjool dates
  • Nut or seed butter I used almond butter
  • Dark chocolate
  • Freeze dried raspberries or freeze dried blueberries or strawberries

Instructions
 

  • Slit the dates lengthways on one side and remove the pit.
  • Open it slightly and spoon in some nut or seed butter.
  • Dot the nut butter with some dark chocolate and freeze dried raspberries.
  • Continue with the remaining dates.
  • Eat immediately or store in the fridge in an airtight container
