Whether you like fruit in your salads or not, this combination will change your mind. The salty halloumi is the perfect match for sweet watermelon and the rich avocado.
I’ve done the measurements in grams, as I find it easier for this salad, but like most salads, a little more or less of an ingredient won’t ruin it.
It’s a simple but far from boring summer salad.

Watermelon, Avocado and Halloumi Salad
The combination of watermelon, avocado and halloumi creates a sweet and salty salad perfect for a hot summers day.

Ingredients
Salad
- 200g Halloumi Cheese
- 1 tsp olive oil
- 2 avocados
- 900g watermelon
- 80g spinach
Balsamic Vinaigrette
- 6 tbsp Balsamic Vinegar
- 2 tbsp olive oil
- salt and pepper to taste
Instructions
- Dice the halloumi. Heat olive oil in a frying pan, add diced halloumi and cook for a few minutes on each side until the Halloumi has a nice golden colour. Remove from heat.
- Wash the spinach and dice the watermelon and Avocado.
- Add spinach, avocado, watermelon and halloumi to a large serving bowl.
- Combine the vinaigrette ingredients in a small bowl and whisk until fully combined. Pour over the salad and toss to combine. Serve
