Breakfast Tacos [Dairy Free]
These dairy free breakfast tacos are the perfect start to hungry days. Filled with veggies and eggs they're a nourishing and wholesome breakfast, lunch or even dinner!
- 2 wholegrain tortillas
- 2 eggs fried, sunny side up
- 1/4 cup red onions diced
- 1 garlic clove minced
- 1/2 green chilli de-seeded and chopped finely
- 1/4 cup green peppers chopped
- 1/2 cup tomatoes diced
- olive oil
- salt and pepper
- 1 avocado sliced
- 1 handful fresh parsley to garnish (optional)
Heat oil in a medium frying pan over medium heat. Add onions and cook until onion is translucent.
Add garlic, chilli and peppers and continue cooking until tender
Add tomatoes and cook down until you get a thick and chunky sauce
Add salt and pepper to taste and set Aside
To assemble tacos, divide tomatoes mixture between two tacos, top with a fried egg, avo slices and parsley.
