When the weather turns hot, I find myself craving something cold and refreshing. I freeze grapes and munch them by the bunch and find myself reaching into the smoothie drawer to pick out pieces of frozen fruit. I love making fresh juices and discovering new flavour combinations; and figured if it tastes good as a drink, it’ll work just as well as a cold pressed juiced popsicle.
These pineapple, strawberry, and ginger cold pressed popsicles contain just 3 ingredients. They’re made by putting the fruit through a juicer and pouring the juice into popsicle moulds until frozen. They’re the lolly version of a cold glass of juice and perfect as a cool down on a hot summer’s day. They have a big kick, thanks to a nice chunk of ginger which pairs perfectly with the sweet pineapple, and tart strawberry.
If you don’t have a juicer, you could probably take the ingredients and blend them, and pour that into a mould. It will come up more frozen smoothie-like but should work (although with this recipe I have not tried it, I use that method with these and they’re fantastic).
This summer, may we suggest turning your cold pressed juice into cold pressed juice popsicles. Best part is, they’ll last a lot longer frozen than in your fridge, which means you can make a stash and have for the entire summer.
